Optimize for Mobile pagespeed score of Google. The current theme classic shop example has a low pagespeed score.
Below is the other theme serious on focussing on the pagespeed and other aspects of e-commerce website:
Hope flatsome will improve upon speed aspect and become feature rich but light weight theme of its own kind.

flatsome css and js are bloated. you should definietly fix it to improve performance

Sections can be hidden for mobile view but they still loading in the HTML code. So what if a visitor opens only the mobile version and that section is not loaded at all using script?

We were able to achieve "green" score on GPS impoving CLS. We achieve this adding some css code specifically for the home slider that has lots of "movements" before it fully loads. Hope Flatsome could automatically do this task on the background allowing us to fix heights and widths of above the fold elements. This will radically improve scoring

Removing unused JS and CSS should makes the theme very fast.
Flatsome.js and flatsome.css bloats the loading.
Also I know it's difficult, but excluding jQuery from render blocking would make the theme very fast.

How could we score higher when the theme testing page it self is not ranking higher than 26?

Tobias PS: i read this 3 lines https://docs.uxthemes.com/article/232-how-to-increase-page-speed i use WP fastest cache plugin, fast nginx hosting, CDN, optimized images and get a bit better mobile page speed results as your example site:
